Origins of biltong
Biltong has it's origins firmly set in the heart of Southern Africa. The word biltong, is derived from two 18th century Dutch words, BIL-butt, TONG-strips. The butt cut used today is usually the silverside as this gives the best biltong steaks.
Making biltong was a way of preserving meat way back when and is today made with exactly the same home-made recipe, the only change is the curing environment.
The meat would be cut into strips coated in salt & coriander and hung out, preferably in the shade, to cure. This is still done today out in the highveld, with the intrepid biltong makers hoping for a bit of wind, to get that first protective skin on that little bit quicker.
